
Nestled in the heart of Flagstaff, Arizona, Pizzicletta has become a cornerstone of the local food scene. It is celebrated for its exceptional Neapolitan pizza, house-made gelato, and inviting atmosphere. This pizzeria is the culmination of Caleb Schiff’s dedication to high-quality, hand-crafted meals and his love for bringing people together over great food.
Pizzicletta’s story began when Schiff built a wood-fired pizza oven in his backyard and began cooking for friends. The response was so positive that it led him to open his pizzeria in Flagstaff. “We wanted to create a place that reflected our commitment to high-quality food made from scratch,” says Schiff. The name “Pizzicletta,” a playful nod to the Italian word for bicycle—“bicicletta”—reflects the movement and energy of the space, as well as the care put into every dish.

The pizzeria specializes in Neapolitan-style pizza, using naturally leavened sourdough for its dough and making everything in-house. Each pizza is cooked to perfection in a wood-fired oven, ensuring a crispy, smoky crust with a perfect balance of fresh ingredients. In addition to pizza, Pizzicletta offers a selection of artisan breads and seasonal fare that highlight the best of local ingredients. For those with a sweet tooth, the house-made gelato provides the ideal finish to any meal.

The atmosphere at Pizzicletta matches its menu: unpretentious yet vibrant, with industrial décor and cozy seating. Its two locations, one at Dark Sky Brewing Co. and another near Mother Road Brewing Company, provide the perfect backdrop for enjoying great food with friends, a local beer, or a glass of wine. “We wanted to create a space where people could come together and connect,” says Schiff, reflecting the communal nature of the restaurant.
Pizzicletta’s success has paved the way for Schiff’s future endeavors. In 2020, he and his hospitality group took over Indian Gardens, a café and market in Sedona, and they are now preparing to open Sosta in Flagstaff. Set to open in March 2025, Sosta will feature an all-day café with fresh pasta, pizzas, and a menu designed to cater to a broad audience. Schiff describes the concept as a “180-degree change” from his previous ventures, focusing on offering an affordable, all-day dining experience. “We’re focused on keeping the menu accessible,” Schiff explains. “Our goal is to create a place where people can enjoy great food, from breakfast and lunch to dinner, at a price point that works for everyone.”

Sosta’s design will incorporate cozy micro-seating areas alongside communal tables, all within the historic Carriage House, a building constructed in 1909. “We want to offer people a place to pause and connect, whether over coffee in the morning or pizza at night,” Schiff says. The space will also feature a phone locker to encourage guests to disconnect and focus on their meal and company.
The ethos of quality ingredients, community focus, and a welcoming atmosphere runs through all of Schiff’s businesses, including Pizzicletta. The pizzeria has earned a devoted following in Flagstaff with its commitment to delicious, handcrafted pizzas and a warm, inviting vibe.
