When Nick Hogan was a student at the University of Arizona in the early 1990s, he often treated himself to sushi dinners with friends. At the time, sushi was still considered a novelty in much of the United States, especially in the Midwest, where Hogan grew up. That simple indulgence planted a seed that would grow into one of the nation’s most dynamic hospitality companies. Today, Flagship Restaurant Group operates dozens of concepts across the country, with Arizona serving as both a testing ground and a new home for its most imaginative restaurants and bars.

From Law to Hospitality

Hogan initially pursued law, completing his degree and passing the bar. Yet, the lure of entrepreneurship was strong. After studying international business and spending time traveling through Europe, he returned to Omaha, Nebraska, and built a career in real estate development. Still, the dream of creating something in hospitality never left him. With encouragement from his family, Hogan assembled a team of partners who brought diverse expertise to the table: architect Tom Allisma, hotel management professional Anthony Hitchcock, and chef Tony Gentile. Together, they launched Blue Sushi Sake Grill in Omaha in 2002, a groundbreaking concept for the region. 

Blue Sushi proved that sushi could succeed in unlikely markets if presented with creativity, accessibility, and style. From there, Flagship Restaurant Group expanded rapidly across the Midwest and Texas. But in 2017, when Hogan moved to Phoenix’s Arcadia neighborhood, he was eager to create a culinary legacy in Arizona.

The pandemic reshaped the hospitality landscape, and Hogan saw opportunity. Many restaurant projects in Downtown Phoenix were abandoned, leaving behind unique spaces. Flagship acquired one such dual property in Roosevelt Row, complete with a 5,000-square-foot patio, a partially built-out interior, and even a duckpin bowling alley. Rather than shy away from the unusual footprint, Hogan leaned into it, creating two wildly different but equally captivating venues: Châm Pang Lanes and Palma.

Châm Pang Lanes offers a retro-chic cocktail experience that is equal parts play and indulgence. Neon lights, disco chandeliers, and funky wallpapers envelop the space, which sets itself apart with duckpin bowling and pinball, in addition to traditional games like pool. Cocktails reign supreme here, paired with champagne, sushi, and shareable bites that balance whimsy with wow-factor.

Palma, next door, is an entirely different world. Tropical in design and spirit, it channels oasis-meets-desert energy through a lush patio filled with greenery, firepits, misters, and water features, airy interiors, and vibrant music. Guests flock here for fresh, globally inspired plates such as ceviche, tacos, sushi, and party platters. The bar program emphasizes fruit-forward cocktails with rum and tequila, delivering a carefree, vacation vibe.

Ghost Donkey

In 2022, Flagship further cemented its reputation for high-concept venues with the debut of Ghost Donkey in Phoenix. The Mexican-inspired mezcal and tequila lounge originated in New York and quickly developed a cult following for its festive atmosphere and agave-focused cocktails. Partnering with AvroKO Hospitality Group, Flagship brought the concept to Downtown Phoenix, where it thrives amid the city’s resurgent dining scene.

Inside, twinkling lights and vibrant décor create a celebratory environment reminiscent of a hidden cantina. The menu showcases mezcal and tequila in inventive ways, from smoky margaritas to nuanced, spice-infused creations. Cocktails are the star of the show, but guests enjoy chips paired with salsas, guacamole, and queso to complete the experience.

Pyro

For Hogan, Arcadia is more than a place to live; it is a community he wanted to enrich. In early 2024, Flagship unveiled Pyro on the corner of 44th Street and Camelback Road, about a mile from his own home. Designed as a theatrical experience, Pyro is inspired by Japanese casinos of the 1930s, reimagined through the lens of fantasy and design.

The restaurant’s interior is a visual marvel where dark woods, decorative screens, and rectilinear architecture ground the space, while velvet seating and custom chandeliers add layers of intrigue. The open kitchen showcases the heart of the space—and gives guests a preview of some of the most cutting-edge cuisine in Arizona. 

The menu is dramatic—in a good way. Sushi—of course—is featured, but so are a host of Japanese-inspired plates and shareable cuts like aged ribeye. Noodles, seasonal vegetables, and bold sauces round out the offerings, ensuring every palate finds something striking. Outdoors, a patio mirrors the interior’s elegance, offering diners a chance to sip sake beneath carefully curated lighting and landscaping.

Blue Sushi and Beyond

Even as new Arizona concepts make waves, Flagship has continued to expand its original brand. Blue Sushi Sake Grill now has locations in Surprise and Tempe, bringing the group’s signature mix of high-quality sushi and approachable style to wider audiences. Guests can enjoy inventive rolls, sashimi, and sake in a contemporary setting that bridges Midwest roots with Arizona energy.

Looking ahead, Hogan and his partners are planning a significant, multi-concept development in Gilbert for 2027. The project will showcase Flagship’s signature approach to hospitality: diverse venues, unique identities, and an unwavering focus on memorable food and drink. Expansion into Tucson is also on the horizon, a fitting full-circle moment for Hogan, whose earliest food memories in Arizona helped inspire his path.
